No matter which way you look at it, supermoms, we have a trickster in our midst. May I expose it? Muffins are nothing more than CAKE in disguise! They've quietly infiltrated coffee houses and pastry baskets, hiding as a non-dessert option, tempting us with their hallmark trait of being a cherished breakfast food. It's easy to see them for something other than what they are, which is simply a slice of cake. There are few redeeming qualities to these imposters and lots more to consider before indulging here: sugar, empty calories, processed ingredients. No, not even the blueberries count in making this a healthy choice. For those of you living in denial-land, sorry to burst your bubble! Stick to fruits, whole wheat toast, eggs, or just your non-fat, sugar-free latte. Keep dessert where it belongs...an occasional treat to enjoy not part of your meal plan!
